*Roast Loin Of Pork With Crisp Crackling & Caramelized Apple Wedges


I need a break from these big chunk of meat. They are delicious but both me and my husband are having too much meat roastophobia. My husband wanted fries and I just wanted a good slice of spinach feta pizza.

The stuffing was pretty tasty, although the hubby said it felt like biting into a pine tree. It was very strong in flavor and  really got rid of the stanch of pork while keep your focus on the tenderness of the meat. I enjoyed the apple side especially, caramelized apples are always a good compliment for pork because its sweet and sour taste gave the pork a refresh on taste.

The crackling outer is the highlight of the dish, it was salty and crispy. Remember to get the loin with the skin, since most of the store cuts will have them removed. 


It is a very festive and rich dish which will do great on a big family meal and it can feed at least 6 people.

  1. It is very hard to understand the recipe, and I don't see any apples in the recipe.

    1. That is too bad :(. I tried to find recipes that is close to what I have in the book, but not always successful. The reason I did not just copy the recipe down is that I think Gordon Ramsay probably will appreciate people to buy his book, I do not feel right to just put it in the public space for free. It is a very nice book, with a lot photos and recipe is very detailed with a lot tips, well worth the money for me.
