*Antipasti (Stuffed Zucchini Rolls, Balsamic Beet With Roquefort) + Prosciutto, Sage & Parmesan Puffs + Marinated Mushrooms
It is cold and blowing snow outside, everything is in the state of winter with pale colors and brittle branches. And I cooked four courses from the "summer entertainment " section of the book. A four course dinner tonight, the reason being all of them are very small portion entries. It ended up felt like my mouth was torn apart by all these very different flavors.
The stuffed zucchini rolls were very tasty, creamy ricotta cheese blended with zesty lemon juice wrapped in fresh zucchini slices, it is a great cool down summer treats, and it will almost make your teeth chatter in winter...Pardon my poor rolling job, just not very good at rolling. .Did not like the Balsamic beet with Roquefort though even my husband loved it. It was too strong for me not only because of the Roquefort cheese which I can bear, but because the beet. I just do not like beet, it makes me stick out my tongue and crinkle my face as soon as I hear the name of it.
I loved the prosciutto, sage & Parmesan puffs and marinated mushrooms. They are like the cool actor and his side kick, they just work so well with each other. The puffs are rich and heavy, and the mushrooms tasted very strong with all the wine vinegar and shallots. It would get boring for the puffs without the mushrooms, while the mushrooms would be too sharp without the puffs. This combo would be a great starter course served before a formal dinner, it promotes appetite and a little of them give out a lot of flavor.
A great fun dinner overall. Now I am going to have some hot chocolate...
