The way it was cooked was absolutely interesting. The fish was wrapped in plastic wraps with herbs(basil) and seasoned before they are poached in hot simmering water. The flavors are well preserved because the wrap, and the meats are tender because it was only cooked in the simmered water. What a genius way to cook!
It was unforturnat, but Nova Scotia is not a place for sea bass, after two weeks of bugging the sobeys stuff, I finally gave up and I used tipila instead. It is also a firm fish which is important because it won't fall apart on you during cooking. I might completely altered the flavor of the fish, but it turned out very delicous and the basil herb worked with the fish very well.
The peas bonne femme was delicious, it would be boring and plain if it was just the stir fried bacon and peas, but the thyme leaves herb Gordon added into it definitely gives a highlight and boost on flavor, became something extraordinary.
Made myself a cocktail after the meal, just going to enjoy the weekend, how nice :)
