Horseradish Marinated Salmon





Gordon Ramsay's family fare cook book challenge day 41:

*Horseradish Marinated Salmon

Not sure if  anyone had ever say any of Gordone's recipe is not good, but this one is a disappointment to me. 
The salmon I bought was fresh and straight from the Atlantic ocean beside our house.The meat melts when knife blade touches it,  and it tasted good even without any dressing or seasoning. Here is the problem I have with this dish: It was over seasoned! There is horseradish, there is Dijon mustard, there is all kinds of herbs and salt, pepper. They completely covered the freshness of the salmon itself. It was overwhelming, and the whole dish tasted like a chaotic mixture of strong spices with something gummy under it. It was heavy and stale. 
I have not cook a lot fish recipes from other types of cuisine, but in Asian cooking which I grew up with, fresh fish is a important part of family dinning. It is always treated as a special dish on the table, and minimum seasoning was always applied to it. This way the light but flavorful tasting of fresh fish meat is the real treasure of the dish. Usually light soy sauce and pepper or horseradish are all what are needed. If you enjoy sushi or Asian fish soup you easily get my point. 

If you really want to try this dish I would suggest save the time for the dressing on top. The herb and salt pepper was all good enough for this dish.
