Griddled Spring Chicken & Vegetables On Focaccia

Gordon Ramsay's family fare cook book challenge day 44:

*Griddled Spring Chicken & Vegetables On Focaccia

I can not find the recipe online, closest thing I can find: http://gordonramsaysrecipes.com/03/gordon-ramsays-baked-chicken/

I would like to live in the up-side-down side of the earth right now because of this grill recipe,  which is perfect for a summer out door BBQ.

I used grill option from the stove since I am not courage enough to get out at almost zero degree to work on the out door bbq.  It was easy and simple to make. Like all good bbq meats, the meats are marianted with garlic, rosemary and seasonings before put on the griddle. Vegetables also requited minimum amount of processing, just roughly choped to thick slices and marinate. A great thing about the combination of the vegetables in this recipe is that, they actually flavor each other. No addition spices are needed, simple grilling the vegetables together was enough to make them very tasty in a natural way.  This is a healthy meal with the goodness of olive oil and little spices.

I am not sure if I have the quality to be a good cook. I felt bad for the Cornish hens when I was carving them. The thoughts of them running in the green grass field came into my mind which really did not help the situation. I thought of respecting the food we eat, but it did not really help neither. Oh, I think the next book I cook I will pick something has less meat...

The bread which is grilled and then drizzled with balsamic vinegar dressing was very tasty, I always like the taste of a genue yeast raised old style bread. The firm texture and the taste of subtle sourness from the yeast eating the flour sugar are so wholesome. A tip here, the bowl that is used to marinate the vegetables will have a layer of olive oil left on it, just use the bread slices to wipe it clean. This way the bread tastes even more crispy and flavorful while no olive oil is wasted.

Maybe I should cook some Christmas-ish recipes so I appreciate winter more...
