If there is a dish in this cook book that does not have a photo that come with it, be very cautious, because it could be a ugly dish. If you want to impress some neighbors with your cooking, the ones who have a fancy house and are always trying to make their lawn looks really fab, I would not make this dish, it is just not fancy enough. It is quite humble looking.  However if you want to make some homey tasty food for a good friend, or your hungry boyfriend/girlfriend. this is a good dish that will make both of you say : hm, this is soooo good!

I substituted the red mullet with halibut which is also a firm white fish, sorry. We have an ocean down the street, so people do not cultivate fresh water fish here....I have to say it is such a privilege living beside the ocean, otherwise you can not get fish this fresh right from the farmer's market which was caught the day before by Joe.  Good Fresh fish only needs simple cooking. This one is just pan fried with salt and pepper. Not over cooking the fish is key, when they become firm and cooked 2/3rd of the way through, flip and cook another side real short. This way the fish is juicy and tasty.

The anchovy dressing is guaranteed to make a impression. It has a real strong fishy and garlicky flavor. It went  surprisingly well with the pan fried fish(yeah, fish sauce over fish), you will want to make that for every pan fried fish you ever make from now on.

A friend asked me today what is the motivation of this cooking challenge, I said because I get cook anyways so I might as well have some fun. There is more though. Everyday for an hour or two I do something new, I walk out from the same box I sit in at work or the same broken box(yeah, under renovation) I sleep in every night, for a little adventure.
