Malaysian Chicken With Coconut Rice

Gordon Ramsay's family fare cook book challenge day 30:

*Malaysian Chicken With Coconut Rice

Similar recipe online, but the book is so worth it: http://www.food.com/recipe/gordon-ramsays-malaysian-chicken-curry-254495

First of all, 30 DAYS!!!!!WOOHOO!!!! This is the thirtieth continues day I had been making food from Gordon Ramsay's family fare cook book, and I absolutely had a great time making them. From the first headless chicken shopping experience to saying hello to the familiar staff who always help me finding items in Sobeys, from constantly telling the husband "dinner is ALMOST ready, dear " to making two courses at the same time. It works better then confidence boosting workshops.  This is also the 30th day me and my husband had been eating the food from this book, I am thinking maybe we have a take out pizza for celebration! It almost felt like we have been very rich millionaire for a while who eats dedicates everyday(ok, I do not know what they eat, money maybe?) now we just want something from the pizza shop, no offense to pizza shops though.

And what a FU*KING(hey it is the 30th day) delicious dish to finish up the 30th day! The Malaysian chicken has the real authentic Asian flavor. It is even better then some of the food we had when we were in Thailand! Truly, everyone can be a chef, cooking is no mystery, and how wonderful it is to bring the world into your own kitchen!

Tip: I found there was too much liquid after I put in the green beans, so after 4 minutes cooking it with lid closed, I open the lids for another 4 minutes to reduce the amount of liquids and thicken the sauce. Otherwise it seems too soupy for me to put on top of the rice.
