Used chicken thigh to replace pigeon breast which also has the fatty skin part. Very tasty and refreshing Salad, although horrible on looking. Horrible as Halloween food, anything touched the beet, has a sheer of "blood" on it. Salad looks like made in a murder scene, and someone just got slaughtered beside it. I liked the crunchy taste of hazelnut, very interesting since I never had them in a salad.
