Crab Wraps With Mango Salsa

This dish would be a perfect summer delight if it was not because it was almost zero degrees outside. Normally you would want some ice tea after this dish and chill out on your lawn chair,  or look out from the bistro window and see the ocean with bright sun shine and people playing in water. yes, this dish can bring you that far...

 The crab meat with mustard and mayonnaise dressing, finished with a dash of lime and salt pepper, was light tasting and absolutely flavorful. Fresh and crunchy iceberg lettuce leaves wrapped the tasty crap filling, it was a happy summer time in the mouth. I had never tried mango in a salad before this but it turned out to be a perfect summer food in this recipe.Zesty and fresh with a touch of mint, it is made for the summer.

The book said it is a easy and fast recipe, but I have to say do not make this if you have 3 hungry mouths waiting to be fed. The salsa and the filling did not take long, probably a short 15 minutes. However assembling it was the fun and timely part. Separating the lettuce leaves without tearing them was like untangling a spider web without breaking it. Hope you have better fingers then mine, it was quite hard to wrap the filling into a crispy lettuce leaf slice and keep them in a rolled shape after putting on the plate. So unless you are expert on wrapping lettuce leaves or you can get everyone wrapping them, it will take a while to finish the dish.

Another thing, the chef will likely to be fed before everyone else...if I made a mistake on wrapping, I ate the failed one, and I was pretty much full when I finished wrapping lol. Oh, summer, how I missed you.
