Arugula, Fennel, Watercress and Pear Salad

Gordon Ramsay's family fare cook book challenge day 27:

*Arugula, Fennel, Watercress and Pear Salad

Similar recipe online, but the book is so worth it: http://danielaskitchen.com/2009/03/23/arugula-fennel-salad/

A zesty taste Salad, looks like a successful salad dressing for me is mustard + lemon, works for me every time. At first I was not sure what is fennel until I bought it and actually smelled it. It was actually a wide used spice (its seeds ) back where I was from. It was often used in dumplings and flavored beans. It made me miss home and dumpling for a while :(.  Did not get the watercress though, Sobeys ran out, have to look forward the next chance when they have it. Loved the pear in the Salad, gave it a sweet taste, really a highlight :).

Husband refuse to have any dressing because trying to cut down oil, to be honest I do not think oil is that bad for you. Julia Child lived a long life, most of her recipes are butter and butter. "According to FAO data, the average French person consumed 108 grams per day of fat from animal sources in 2002 while the average American consumed only 72 -- from wikipedia", but they have a long life span and lower risk in cardiac disease. In my opinion, eating normally and naturally makes a long life, not the packaged food labeled low fat or zero sugar but filled with Chemicals.
