Apple Tarte Fine With Rum & Raisin Ice Cream


This is a desert that is similar to the apple tart desert served in some of Gordon Ramsay's  own restaurants. They cost 18 Pounds and you can make them at home for about 2$ each. Ok, maybe not as pretty as his....


A very interesting way to make an apple desert.  You can definitely taste the flavor of apple, not only from the layer of apple slices on top of the tarts but also from the apple puree under them.  

This is the season apples are tasting the best. I got my apples from local farm market, very fresh and at their ripest.  The richness of fall apple blended with cinnamon and a splash lemon juice, a traditional taste that is predictable while timeless.The tart itself was simple with just sliced apples with butter and apricot jelly to glaze.

The highlight of this tart that made it extraordinary and unusual was the rum and raisin ice cream. The richness of the creme anglaise was so delicious, it fills your mouth with aroma instantly. It was made with cream, milk and yolk, it is almost the same ingredients that makes custard, but in a liquid form. Now you can imagine how rich it is. Yet, it was blended with risen and  rum, it is a adult version of ice cream treat.

I did not have a ice cream churner, so I had to blend the ice to make ice cream, still it did not turn out as good as from a ice cream churner. However, when it melts on the warm apple tart, the flavors blend together. Oh man, a tradition indulgence with a twist.
