Sirloin Steak With Tomato Tarragon Dressing

Gordon Ramsay's family fare cook book challenge day 34:

*Sirloin Steak With Tomato Tarragon Dressing

Similar recipe online, but the book is so worth it: http://www.whatsfordinnermum.com.au/beef/sirloin-steak-with-tomato-tarragon-dressing-and-oven-chips/

What can beat a good steak with home made fries on the side?  And the salsa gives it a distinguishly refreshing flavor rather then the fries BFF catchup. It was a great home dish plus more.

And the best part? It taught me how to make a good steak and excellent home made fries!  Here are the tips I concluded:

First, over season the steak a little bit, half of it falls off during cooking.

Second, make sure the frying pan is really hot when the steak is going to the pan.One trick is: hot pan, cold oil: heat the empty pan first and then put in the olive oil before the steak goes in. This way the oil will not be over cooked before the steak is in.

Third,  do not always follow the instructions time from cook books, Gordon tells you that as soon as the steak feels springy, it is done and take it off the heat!

Last, boil sliced potatoes in salted water a little bit before it is fried with rosemary and salt. Do not laugh at me, but I always put cut potatoes into the oven directly. They always burns or over cook...

This could be the most practical dish one woman/man can ever make. It is a good day when there is a darn good home made steak and fries for supper.
