*Salmon En Croute & Minted Hollandaise

It was a very interesting way to cook the Salmon, two salmon fillets with sauce in between was wrapped in a pie dough before they were baked in the oven. The juice of the salmon was well preserved because of the buttery wrap and the flavorful sauce between the two layer of salmon inside was also well absorbed by the salmon. The salmon tasted like a salmon with some tangy sweet sauce in between the two layers, you can not beat that, salmon has to taste like salmon. The pie dough crust though, was so yummy, I am sucker for starchy food .
The hollandaise sauce was really tricky and fun to make. This is how to make hollandaise: put a bowl in simmering water and put several egg yokes into it and then quickly you pour 1 or 2 tbsp your choice flavored hot white wine vinegar into it. Whisk very fast until it become kind frothy and creamy texture. The trick here is that you can not get too greedy, as soon as the texture just reached creamy texture, take the whole thing out from the simmering water right away, because the bowl will continue to heat the content inside, so you do not want to leave it in the simmering water. Then just whisk third quarter to one cup of olive oil into this mixture, do it very sloooowly and constantly whisking. Salt and pepper and whatever flavor you want at last of course. Voix la, you just made hollandaise.
I need a food processor, I really do, wonder if anyone knows which brand is good. The pie dough for this dish suppose to be processed by a food processor , I used a hand blender. I ended up in a white flour cloud and has to hand grind at the end. -_-b. I stood in my cloud and thought I really should spend some money to get a good food processor.
