*Duck Breast With Spring Greens And gooseberry Sauce
No duck, no pigeons, no game birds for me.....I used ham instead duck, it is definitely not the same, but I do not mind this time. No goose berry here, I used something similar -- cranberries. The sauce was made by cranberry, red wine, stocks and honey etc. it reminds me of thanks giving, I can imagine it makes a really good sauce for turkey. I enjoyed sauce with the meat and spring veges under the meat, but I think I will reuse this sauce recipe for sure :).
