Similar recipe online, but the book is so worth it: Poached and sautéed breast of chicken with a morel velouté,

Simple looking dish with a long background story. The chicken was garlic stuffed whole chicken poached in the stock that was made with leak, carrots ,herbs etc. The cream was made with dry mushroom and onions herbs etc. It took alot of food to cook the dish with most of them just got tossed out. Did not like this part of cooking since I do not like throw food out :S. I liked the cream, creamy and has the nice flavor from the dry mushroom.
